Cheese Steak Sandwich

I love a good cheese steak sandwich, there’s something so yummy about those caramelized onions and gooey cheese with the tender beef.  Not much comes closer to comfort food for me than a yummy combination like this.  The longest stage of this quick meal is the onions, a step you do not want to rush or you will risk burning them.  Onions naturally have sugar in them and when you cook them over low heat until they are tender, the sugars will crispen the onions with a sweet flavour.  You should avoid adding any butter or water or sugar to this step, the remaining juices of the meat will do the task.


2 pounds skirt steak

2 sweet yellow or Vidalia onions

1 pound provolone

2 French loaves or hard bread loaves

Pepper and salt

1/2 cup Worcestershire sauce

Olive oil


Preheat oven to 250 degrees.

Rub seasoning by hand into the skirt steak.  Rub firmly to work it in.  Using a fillet knife to thinly slice the steak into sheets about 1/4″ thick.

Lay the sheets into a broad based skillet or frying pan and cover with the Worcestershire sauce.  Cook over low to medium heat, turning often until no longer pink.

Scoop the meat from the pan and set aside into a oven safe baking dish and cover.  Leave in oven to maintain heat.

Slice onions into 1/4″ to 1/2″ thick rings and drop into the same pan, leaving the meat drippings in the pan.

Over low heat, turn the onions over and continue to cook until they are nicely browned.  Once they are browned, scoop all of the pan contents over the top of the covered meat in the oven.  Recover and place back into the oven.

Turn off the oven.

Slice the bread loaf in half lengthwise with a serrated blade.  Cut a small wedge out of the middle of the bread halves to create a small well.

Place on a cookie sheet covered with aluminium foil.

Drizzle olive oil lightly down the length of the bread.

Slice the cheese into 1/4″ thick pieces and break up to lay over the bottom bread half.

Place in the oven and remove dish with meat mixture.

Put meat and onion mixture back into skillet and stir well to incorporate the two.

Remove the bread loaves from the oven and place a thick amount of meat over each loaf half.  Place the top half of the loaf over the meat and slice into quarters.
