I had three egg yolks I had no use for and I had to find a use quickly for them, so I played around with a few additives and found a cookie that came out testing just wonderfully!
Ingredients
3 eggs yolks
1/4 cup light brown sugar
1/4 cup granulated sugar
1/3 cup butter, unsalted and at room temperature
1 teaspoon orange extract
1 teaspoon orange zest
1 cup all purpose flour
1/8 teaspoon iodized salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Directions
- Blend brown sugar, butter and egg yolks together in a medium mixing bowl until well creamed.
- Blend granulated sugar, flour, soda, salt, and powder together well.
- Gradually add in flour mixture by 1/2 cups, stirring thoroughly.
- Fold in extract and zest.
- Chill dough for fifteen minutes.
- Place a handful of granulated sugar scattered over the workspace.
- Roll dough into balls about 1″ in diameter.
- Roll balls over sugar and place onto a cookie sheet lined with paper.
- Flatten gently.
- Bake at 350 degrees F for 7 to 9 minutes, until firm. They will have a light colour.
- Place into an air tight container until ready to serve.
