Orange Cookies

I had three egg yolks I had no use for and I had to find a use quickly for them, so I played around with a few additives and found a cookie that came out testing just wonderfully!

3 eggs yolks

1/4 cup light brown sugar

1/4 cup granulated sugar

1/3 cup butter, unsalted and at room temperature

1 teaspoon orange extract

1 teaspoon orange zest

1 cup all purpose flour

1/8 teaspoon iodized salt

1/4 teaspoon baking soda

1/4 teaspoon baking powder

  • Blend brown sugar, butter and egg yolks together in a medium mixing bowl until well creamed.
  • Blend granulated sugar, flour, soda, salt, and powder together well.
  • Gradually add in flour mixture by 1/2 cups, stirring thoroughly.
  • Fold in extract and zest.
  • Chill dough for fifteen minutes.
  • Place a handful of granulated sugar scattered over the workspace.
  • Roll dough into balls about 1″ in diameter.
  • Roll balls over sugar and place onto a cookie sheet lined with paper.
  • Flatten gently.
  • Bake at 350 degrees F for 7 to 9 minutes, until firm. ¬†They will have a light colour.
  • Place into an air tight container until ready to serve.
